The beverage sugar reduction playbook
A category-by-category guide to cutting sugar in drinks while protecting sweetness, body, and a clean finish, with a worked dosing example you can copy.

To cut sugar in a drink, set your finished sweetness target, carry most of it with UnSugar Sweet Protein in a blend, keep a little of your current sweetener, then rebuild body and tune the finish. Drinks are the easiest place to start, because a beverage has no crumb or structure to hold, so sweetness and mouthfeel are almost the whole job.
UnSugar Sweet Protein is a sweet protein, the kind of sweetness found in fruit. It is about 500 to 2,000 times sweeter than sugar by weight, so you dose it in milligrams. It dissolves easily and is highly water-soluble, and its sweetness is reported in the literature across roughly pH 2.5 to 10, which covers a tart cola through a near-neutral dairy coffee. Because it is digested as a protein and used at milligram levels, it contributes no sugars and negligible calories. Final performance depends on your formulation and should be confirmed by bench testing in your own recipe.
What are the shared steps for every drink?
Every category below runs through the same five steps.
- Set the sweetness target. Decide the finished sweetness before you touch a sweetener. A 30% cut is a different brief than a 70% cut, and the deeper cut needs more masking and body work.
- Build a blend, do not swap. The strongest results come from a blend. A good starting point is about 65% of the sweetness from the sweet protein and about 35% from the sweetener you already use, whether that is sugar, sucralose, or stevia. The result is a better product, not simply sugar taken out.
- Rebuild body. Removing sugar removes weight. Bring it back with a small dose of allulose for bulk, a light thickener such as pectin, and a pinch of mineral salts. Keep additions small and taste after each one.
- Tune the finish. Acidity masks a lingering finish very well. Raising the acid by about 10% is a simple lever for a shorter, cleaner finish. Alcohol and vinegar both lift perceived sweetness, so start those drinks at about half the calculated dose and adjust up by taste.
- Prove it through shelf life. Bench results do not survive processing on their own. Run a pilot at real line conditions, then taste through the full shelf life.
One habit to keep: taste, do not rely on the Brix meter. Brix measures dissolved solids, so once the sugar is gone it can no longer be used as a sweetness check.
How much sweet protein does a soda need?
Here is a worked example. Every sample bottle holds enough sweet protein to replace up to about 5 kilograms of sugar. You dose it in tiny amounts, so a little goes a long way.
Say your full-sugar soda carries 100 grams of sugar per liter. You want a 65/35 blend, so the sweet protein covers the sweetness of 65 grams of sugar and you keep 35 grams of real sugar.
- Sweetness to cover with the sweet protein: 65 grams of sugar per liter.
- You dose it in tiny amounts, so add a little, then taste and adjust.
- Keep 35 grams of sugar per liter for body and rounding.
Taste it, then adjust. Let taste trials rest 15 minutes before tasting.

Carbonated drinks sit around 70 to 80% for how far the sweet protein can carry the sweetness. Dairy and sweet fruity drinks can go up to about 90%. In every case, confirm the ceiling in your own base.
What changes category to category?
Carbonated and sparkling. These run acidic and often see a heat step, which suits the sweet protein well. Carbonation adds bite that stands in for some lost sugar tingle, so lean on it and rebuild body lightly.
RTD tea and coffee. Tea brings its own bitterness, so a clean sweetener keeps you from stacking bitter on bitter. Coffee with milk sits near neutral pH, and dairy mutes sweetness, so set your target against the finished, milk-loaded base rather than dumping in more of one sweetener.
Juice. In the United States a product labeled "juice" is limited in what it can add, so most reduced-sugar work lives in the juice drink space. Dilute the juice to cut intrinsic sugar, then rebuild sweetness so it does not taste watery, and use pectin to restore body.
Sports and functional. Lead with a clean sweetener so you are not stacking bitterness on caffeine, botanicals, or vitamins. Use the electrolytes you already have to round sweetness and add body.
