Here is how the dose lands in a real formula, from your sugar target to the amount you actually weigh out.
A little goes a long way. UnSugar is 500 to 2,000 times sweeter than sugar, so you dose it in tiny amounts. Your applications team helps you dial in the exact amount for your product.
Take a cola at 100 grams of sugar per liter and aim to replace 75%, which sits inside the roughly 70 to 80% ceiling for carbonated drinks. That hands 75 grams of sugar sweetness to the sweet protein, with 25 grams of sugar kept in for body.
Then taste. Rest the trial about 15 minutes, then taste against your standard.
Two beverage levers. For an alcoholic version, alcohol lifts perceived sweetness, so start at about half the calculated dose and adjust up by taste. If the finish feels long, raising the acid by about 10% cleans it up. Pasteurizing the drink is fine, because the water in it protects the sweet protein through heat.

Why beverages are where sweet proteins shine first
Of every category a formulator might tackle, drinks are the one where a high-intensity sweetener does the most good with the least collateral rebuilding. The two things that still need attention
The first is the sweetness curve. Carbonation, acidity and cold serving temperatures all change how sweetness is perceived, and a drink that measures correctly sweet can still taste wrong if the onset is slow or the finish lingers. Full-sugar drinks carry dissolved solids that give a subtle weight on the palate, and stripping them out can leave a beverage tasting watery. This is a mouthfeel problem, solved with the same fibers, gums or moisture-holding ingredients beverage developers already know, not a sweetness problem, so it is important not to try to fix thinness by adding more sweetener.
Acidity, aroma and the finish
High-acid drinks are the most demanding test of any sweetener, and they are exactly where the off-notes of older high-intensity sweeteners become most obvious. No. We do not support that claim. UnSugar is a food ingredient and we make no glycemic claim; any finished-product claim is for your own regulatory review.
Will removing sugar make the drink taste thin?
It can. Sugar contributes dissolved solids as well as sweetness, so deep cuts in beverages usually pair a sweetness tool with a mouthfeel strategy.
