Reading a sweet protein spec sheet, CoA, and allergen statement
A practical guide for R&D, QA, and regulatory reviewers on the documentation that ships with UnSugar Sweet Protein and how to read it well.

Before any new sweetener enters your plant, a stack of paper arrives ahead of it, and that paper is where evaluation actually happens. A spec sheet, a certificate of analysis, an allergen and nutrition statement, and the regulatory file together tell you whether an ingredient is real, consistent, and defensible on a label. This guide walks through each document for UnSugar Sweet Protein, what it should contain, and what to ask a supplier for.
What does the technical data sheet tell you?
A technical data sheet, often called a spec sheet, describes the ingredient in general. It is the reference specification, not a batch result. A good one starts with identity: the ingredient name, that it is a plant-based sweet protein use, and its molecular description. From identity, the sheet moves to the properties your process cares about:
- Appearance, color, and odor, plus assay or purity as a percentage of protein, and typical moisture content.
- Particle size, bulk density, solubility, recommended use levels, and behavior under heat and pH.
Typical properties reported on the technical data sheet include: 500 to 2,000 times sweeter than sugar by weight (a use-level property, not a batch specification), highly water-soluble with sweetness reported in the literature across roughly pH 2.5 to 10, and sweetness retained up to about 98°C in high-moisture systems. Treat those as design signals. Confirm the exact figures against the current spec you are sent, since values are product-specific and refine as a process matures. Do not carry a number from an old datasheet into your own formulation work.
What is the difference between a spec sheet and a CoA?
If the spec sheet is the promise, the certificate of analysis, or CoA, is the proof for one specific lot. It reports the measured results for a named batch against the specification, with the lot number, manufacture and expiry dates, and the methods used. A CoA is what lets your incoming QA team release or reject material at the dock.
The real question at scale is not whether the ingredient works once. It is whether lot 47 behaves like lot 3 after you have built a product line around it. One CoA tells you a lot passed. Several CoAs across different lots tell you the process is in control.

Ask for three to five CoAs from different production batches during evaluation, not just the CoA for your sample. A complete CoA typically reports identity confirmation, assay or purity, moisture, and the safety panel your category requires: heavy metals, microbiological counts such as total plate count, yeast and mold, and pathogen tests including Salmonella. Check that every result sits inside the spec limits, that methods are named, and that the certificate is signed.
How do I read the allergen and nutrition statement?
The allergen statement tells you what the ingredient contains and what it was exposed to. It should address the major allergen groups your markets regulate, such as milk, eggs, fish, crustacean shellfish, tree nuts, peanuts, wheat, soybeans, and sesame in the United States, and state clearly whether each is present, absent, or a shared-line cross-contact risk. Because the sweet protein is plant-based and not a common allergen crop, a clean allergen profile is plausible, but require the supplier to state it in writing. Confirm the feedstock and any processing aids, since those are where an unexpected allergen would enter. Request the current allergen and dietary statements and the label declaration position with the technical documents.
The nutrition statement gives the composition for your own label math. At the milligram doses a high-intensity sweetener is used, the caloric contribution is negligible even though protein carries about 4 kcal per gram. On metabolism, keep to what the science supports: because the body digests the sweet protein as a protein rather than a sugar and it is used at milligram levels, it contributes no sugars and negligible calories. Do not extend that into a health claim on your packaging without your regulatory team's review.
What is the exact regulatory status?

What does good supplier service look like?
Evaluation is also a test of the supplier. How quickly and completely they answer tells you how they will behave in production. During evaluation, request the current spec sheet, a representative CoA plus several historical CoAs from different lots, the allergen and nutrition statements, and the regulatory package. Ask for the storage and shelf-life conditions and the retest date so your warehouse handles the material correctly. A supplier who sends a spec sheet with no version and no matching batch data is telling you something about their quality system before you run a single trial.
