The basics
What is UnSugar Sweet Protein?
It is a sweet protein, the kind of sweetness found in fruit. Your tongue senses sweetness through the sweet-taste receptor, the part of the tongue that picks up sweet flavor, and a folded protein chain switches that receptor on at a much smaller dose than sugar. It is a small protein. Because it is a protein, your body digests it the way it handles any dietary protein.
How sweet is it?
It is about 500 to 2,000 times sweeter than sugar by weight. So grams of sugar are matched by milligrams of sweet protein. The use rate is roughly one part sweet protein for every 1,000 parts of the sugar it replaces.
How do I dose it at the bench?
Dose from a solution, not from dry powder. Every sample bottle holds enough sweet protein to replace up to about 5 kilograms of sugar. You dose it in tiny amounts, so a little goes a long way.
For example, to sweeten 1 liter of drink to the level of 50 grams of sugar, add a little, taste, and adjust. The sample powder comes in 1 g, 2 g and 10 g packets.
Taste and formulation
How is it different from stevia and monk fruit?
Stevia and monk fruit are plant extracts made of small molecules, and many people notice a bitter or licorice-like note. UnSugar Sweet Protein carries a cleaner, more rounded sweetness that sits closer to sugar, and it rounds out the bitterness and off-notes of stevia and monk fruit. It is not free of all character, since there is a slight onset delay and a gentle finish, but it reads far closer to sugar than either extract.
Should I blend it or use it alone?
Blend it. The strongest results come from a blend. A good starting point is about 65% of the sweetness from the sweet protein and about 35% from the sweetener you already use, whether that is sugar, sucralose, or stevia. How far the sweet protein can carry the sweetness depends on the category:

The easiest place to start is a stevia or sucralose drop-in, because the bulk those systems provide is already solved.
Does it replace sugar's bulk?
No. A high-intensity sweetener replaces sweetness only. Sugar also provides bulk, the browning that gives baked goods their crust and color, mouthfeel, freezing behavior, and shelf-life effects. Deep cuts usually need allulose, fibers, or sugar alcohols alongside the sweet protein, so treat it as one part of the system rather than a drop-in swap.
Process behavior
Is it heat and pH stable?
Its sweetness is reported in the literature across roughly pH 2.5 to 10, and it is supplied at about pH 4.0. Sweetness is retained up to about 98°C in high-moisture systems. Water protects it: high-moisture products hold about 80 to 85°C at the core whatever the oven is set to, so moist cakes, pasteurized drinks, sauces, and jams are fine. Long high heat in low-moisture products, above about 90 to 100°C for a long time, can relax the protein so it tastes less sweet. That is a taste effect only, not a safety or quality concern. Biscuits, crackers, extruded snacks, and high-temperature spray drying are the cases to watch, so talk to us about long, dry, high-temperature processes.
How does it behave in different recipes?
It is water-loving, dissolves easily, and is highly water-soluble, so it performs well in water-based and dry powder systems. In dry blends, mix it in steps, about 1 kg into 10 kg, then into the full batch, so it spreads evenly. In fatty, low-water systems such as chocolate and fat fillings it can sit in patches, so carry it in through a dry or water-containing phase, or use an emulsifier such as lecithin. Two things to teach every trial: taste, do not rely on the Brix meter, since Brix can no longer measure sweetness once the sugar is gone; and acidity masks a lingering finish, so raising the acid by about 10% gives a shorter, cleaner finish. Alcohol and vinegar both lift perceived sweetness, so start those at about half the calculated dose.
How should I store the samples?
Refrigerate the sample bottle for longer shelf life, especially once opened. Keep the sample powder sealed and dry, since it draws in moisture, and absorbed moisture makes it weigh heavy and quietly throws off the dosing math, so let a packet reach room temperature before opening. The finished product needs no special conditions and stores well dry at 25°C.
Health and regulatory
Does it affect blood sugar?
Because your body digests it as a protein rather than a sugar and it is used at milligram doses, it contributes no sugars and negligible calories. That is a statement about the mechanism, not a diabetes or health claim. It carries about 4 kcal per gram like any protein, but at milligram doses the calorie contribution is negligible.
What is the regulatory status?
UnSugar Sweet Protein is self-affirmed GRAS, with a GRAS Notice filed with the FDA. A filed and listed GRAS Notice means the notice is on record, not that the FDA has approved the ingredient, so it is never described as an FDA approval. We share the supporting materials for your files on request.
