If you are reformulating to cut added sugar, you have probably put stevia, monk fruit, and a sweet protein on the same tasting bench. They all land in the natural, high-intensity bucket, and marketing copy tends to flatten them into interchangeable options. They are not. Each behaves differently on the tongue, in the body, and in your supply plan. The short version: stevia and monk fruit are proven and cost-effective, and a sweet protein reads closest to sugar and cleans up their off-notes in a blend.

This is a working comparison, not a hit piece. Stevia and monk fruit do real things well. The goal is to be specific about what separates the three so you can pick the right tool, or the right blend, for the job.

What are they, exactly?

Stevia is a plant extract. The sweet molecules are steviol glycosides pulled from the leaves, and not all of them taste the same. Reb A is the workhorse the industry standardized on; Reb M is the cleaner, more sugar-like glycoside everyone now wants, though it exists in the leaf in tiny amounts, so a lot of what is sold is made by fermentation.

Monk fruit is also a plant extract. Its sweetness comes from mogrosides concentrated from the fruit. It has a clean natural story that consumers respond to.

How do they compare on taste and finish?

This is where formulators spend the most time. Stevia's weakness is real, not imaginary: steviol glycosides switch on bitter-taste receptors, which is why higher-purity stevia carries that bitter, slightly metallic tail. Reb M is a genuine improvement, cleaner and less bitter, so if you can source and afford it, stevia's biggest problem shrinks.

Monk fruit is generally smoother than older stevia. Its issue is a lingering sweetness and, at higher doses, a sometimes fruity top note.

What does the body do with them?

Stevia's glycosides and monk fruit's mogrosides are non-nutritive; they pass through largely unmetabolized and contribute essentially no calories.

UnSugar Sweet Protein is a sweet protein, so the body digests it the way it digests protein. Because you use it at milligram doses, the caloric contribution is negligible. The relevant point for reformulation: since it is handled as a protein and not a sugar, it contributes no sugars and negligible calories. How do they compare on stability and use level?

All three are high-intensity, so you dose tiny amounts. UnSugar Sweet Protein is about 500 to 2,000 times sweeter than sugar by weight, and in most reduced-sugar foods our formulators start near the top of that range and adjust by taste, so a milligram does the work of a gram.

On stability, it has a useful profile. It holds its sweetness up to about 98°C, has sweetness reported in the literature across roughly pH 2.5 to 10, and is highly water-soluble. Stevia and monk fruit are also reasonably heat and pH stable, which is part of why both are already widespread in sodas and dairy.

The honest constraint that applies to all three: none of them replaces sugar's bulk. Sugar delivers the browning that gives baked goods their crust and color, texture, freezing-point control, moisture control for preservation, and structure. A high-intensity sweetener replaces sweetness only, so deep cuts still need bulking agents, fibers, or sugar alcohols such as allulose, plus rice flour or corn starch and a longer, cooler bake for a crisp snap. That is not a knock on any one ingredient; it is physics.

What about cost and supply?

Stevia's cost hinges on which glycoside you need. Commodity Reb A is cheap and abundant; the good-tasting Reb M is scarce in the leaf, so it costs more.

Monk fruit has a concentrated growing region, so pricing and availability can swing with a single region's weather and policy.

A plant-based sweet protein has a steady supply that is not tied to a specific crop, region, or growing season, which is a structural advantage for planning. It is a newer ingredient, so you weigh that resilience against a shorter track record and the need to design it into a formula rather than dropping it in.

Where does each one earn its place?

This is not a winner-take-all decision. Stevia, especially Reb M, and monk fruit are proven, available, and cost-effective for many applications, and they will stay in the toolbox.

A sweet protein earns its place in a few clear situations: when you need the cleanest, most sugar-like sweetness at milligram doses; when a deeper cut makes stevia or monk fruit off-notes show through; when you want a clean protein-based label; and when you want to round out the bitterness of the extracts you are already using. Think complement, not rip-and-replace. Some of the best results come from a blend, a good starting point being about 65% of the sweetness from the sweet protein and 35% from your existing sweetener. In suitable formulations that can help replace 60 to 90% of the sugar, and final performance should be confirmed by bench testing in your own recipe.

Common questions

Is a sweet protein safer than stevia or monk fruit? This is not a safety ranking. UnSugar Sweet Protein is self-affirmed GRAS, with a GRAS Notice filed with the FDA. Stevia and monk fruit are widely used ingredients with their own regulatory histories.

Can I swap monk fruit for a sweet protein one-for-one? No. Their sweetness curves, dosing, and interactions with your recipe differ, so you redevelop the sweetness system rather than substitute by weight. Often a blend, not a straight swap, gives the best result.

Will any of these give me a product that tastes like full sugar? Not by themselves, because none provides sugar's bulk, browning, or texture. For a deep cut you pair a high-intensity sweetener with bulking agents or fibers.
