How it comes together

The formulation approach

Blend to about 50%. Allulose and your starch or hydrocolloid system rebuild the bulk and the bite, while the sweet protein carries a clean, fruity sweetness. Confirm the texture on the bench, since chew is formulation-specific.

A worked example. In a 30 g serving that carried about 18 g of sugar, about 50% of the sweetness comes from UnSugar Sweet Protein and the rest from your existing sweetener. You dose the sweet protein in tiny amounts, and your applications team confirms the exact amount for your product. This reduction is the target we formulate to; these figures are formulation targets our applications team works to, confirmed in your own product by bench testing.
