Greek yogurt is already high in protein and low in fat, so sugar is doing a sweetness job here, not a structural one. That makes a deep cut realistic.

How it comes together

The formulation approach

Carry most of the sweetness with the sweet protein and add a small amount of allulose to restore the gentle body and rounded finish that sugar gave. The sweetness is clean and upfront, which suits a tangy cultured base.

A worked example. In a 170 g serving that carried about 12 g of sugar, about 88% of the sweetness comes from UnSugar Sweet Protein and the rest from your existing sweetener. You dose the sweet protein in tiny amounts, and your applications team confirms the exact amount for your product.
